Today I am excited to share with you how you can get a delicious meal on your table in less then 25 minutes. You know how I like quick, easy and delicious. Well this Garlic Pepper Salmon and Asparagus recipe falls into all of those categories! Being a busy mom with work, school, after school activities it can often times be hard to have a good meal ready for my family. I have certain recipes I like to fall back on when I don’t have much time and this is one of them.
I am also trying to add more fish into my families diet. I found that Salmon is one of our favorites. To be honest I was worried about cooking salmon but I have found several salmon recipes we love and are so easy to cook. Salmon really isn’t that difficult at all. Garlic Pepper Salmon and Asparagus
This Salmon and Asparagus Dinner is one that your family will love. This recipe just needs just a few ingredients and only a little bit of prep, which is my kind of dinner! You of course need your Bumble Bee SuperFresh® Salmon with Garlicky Black Pepper & Extra Virgin Olive Oil, asparagus, rice and chicken broth.
- Bumble Bee SuperFresh® Salmon with Garlicky Black Pepper & Extra Virgin Olive Oil (2 come in each box so grab as many as you need for your family)
- 1 bunch asparagus
- Olive oil
- Salt & Pepper
- 2 cups Rice
- 4 cups Chicken Broth
Preheat your oven to 425 degrees. The salmon and asparagus take 22 minutes to cook and my rice takes 20. Look at the directions on your bag of rice to find the time, it will probably be similar. Since they both take around the same time I started with the rice first since it will take time to bring the broth to a boil. Put your chicken broth in a sauce pan and bring to a boil. Once it comes to a boil add your rice, stir, cover and reduce heat and cook for 20 minutes.
While you are waiting for the broth to come to a boil for your rice start working on the asparagus. Make sure to wash and dry your asparagus. Next you want to get rid of the dry ends. I don’t cut these off since I am unsure how far up it is dry. What I do is snap the asparagus. It will snap where it is dry. Throw away the dry ends. Drizzle olive oil over the asparagus and add salt and pepper. Toss the asparagus around so everything is coated.
Now lets get to the delicious salmon. This salmon is so incredibly easy to work with. In each package is two frozen salmon filets and 2 parchment paper pouches.

Place the salmon in the parchment paper pouches with seasoned side up.
Fold the open end over and inch to seal. Fold a second time to create a nice seal. Place the pouches onto the cookie sheet with the asparagus. I just push the asparagus to the side – they still cook great that way. Put the baking sheet into your preheated oven and cook for 22 minutes.
The rice should get done a couple of minutes before the salmon. I like to add it to a pretty platter.
When the salmon and asparagus are done pull them out of the oven. The pouches will be puffed up a bit because of steam. So be very careful when cutting them open.
Cut the pouches open – you can serve them directly in the pouch on a plate or gently pull them out.
This time I pulled them out and placed the salmon and the asparagus on the rice.
The first person I asked to try this dish was my son Kayden. He adores salmon and he loves this dish! Everyone in my family enjoyed this dish however my daughter said it was a little to peppery for her. There is a lot of pepper but when pared with some rice and asparagus it all nicely balances out.
